Cryssie's Crockpot Chicken Noodle Soup

It's that time of year again.......hot soup, fire place and movies! Here is an awesome and easy recipe for crockpot chicken noodle soup! 

1 1/2 lbs boneless skinless chicken breasts
2 cups carrots, peeled and chopped
1/2 medium yellow onion, diced
3 stalks celery, chopped
3-4 cloves garlic, minced
3 tablespoons extra virgin olive oil
1/2 teaspoon dried thyme
1 bay leaf
6 cups chicken broth 
1 cup water
Salt and freshly ground black pepper, to taste (I used 1/2 teaspoon salt & 1/4 teaspoon pepper)
2 cups uncooked wide egg noodles (recommend brand is No Yoke, see note below)
3 Tablespoons chopped fresh parsley

Directions

1. In a 6 quart crockpot place whole chicken breasts on the bottom and top with , carrots, onion, celery, garlic, olive oil, thyme and bay leaf.

 2. Next add in chicken broth, water, and season with salt and pepper to taste. I used 1/2 teaspoon salt & 1/4 teaspoon pepper. Cover and cook on low heat 6 – 7 hours.

3. Remove cooked chicken breasts and cut into bite sized pieces. Place chicken back in to the crockpot. Now add in egg noodles and parsley.

4.Cover and cook just until noodles are tender, 5-10 minutes.

Darin loves when I make this! It's quick, easy, healthy and OH SO YUMMY!!!!

Weekend Shenanigans - Scary Movies, Pokeman, and Rest

I didn't have much weekend shenanigans since I have been resting from having the endoscopy but it was definitely a nice weekend still.

Hubby and I watched some scary Halloween movies....I mean it's the month of October!! So, he grabbed us some popcorn from Ears A Poppin' and we made it a weekend of movie rentals!!!!

By the way, the Witch was very scary and very good!!!! If you are looking for a creepy movie to watch this October, this is the one to watch! CREEPY!!!! I said "Jesus Jesus Jesus" the whole time!

Today we got out for the first time and joined the Pokeman Art Drop...I started to feel a little dizzy from meds but we made it long enough to grab this beauty from one of my favorite artists, XReyRey!

Now we are home relaxing watching one of my favs.....

Hoping tomorrow, I will feel better!!!!

What I'm Loving Wednesday - Fall And Life

I'm loving that work is slowing down and that I can get caught up on things!

I'm loving that fall is here and I have a new home to dress up for fall, Thanksgiving, and Christmas!!!

I'm loving where I am in life!  Marriage is awesome, work is great, and family life is amazing!  Things are really at an awesome place!

I'm loving that one of my volunteers is one of my best friends, Mary, so I get to see her every Sunday and Wednesday!  It's what I look forward to on Wednesdays now!

Corn Maze Shenanigans 2014

I am a bit behind (as usual) on my blog.  I haven't even had a chance to tell you how exciting our fall was and here we are already approaching winter/Christmas time!  Darin and I worked a night at the corn maze which was ...... fun errrr..... interesting.  It was actually a very miserable night but Darin and I made it fun (as usual).  We always have fun together NO MATTER WHAT!  Get us together and we can make any boring or miserable event a good time full of laughs!  It was freezing cold, raining, and we missed the last half of the Texas Tech Football game (so we errrr I was already grumpy about that).  However, we did get to go back to the corn maze at a later date and enjoy it with his father.  We had so much fun!  Those two guys are a hoot and it's DEFINITELY nothing but laughs with those Addis boys!
